Tucked just off Grand Ave in Burnsville, right next to a gas station, sits a food truck that might not catch your eye at first glance — but trust me, Tacos Tacuba is one of those under-the-radar spots that delivers the kind of flavor and heart you'd expect from a family-run taqueria deep in the streets of Mexico.

The vibe here is no-frills, but welcoming. The crew running the truck were all smiles and more than willing to handle a special request for me — I asked if they could cook the veggies in my alambre a little longer, and they gladly obliged without hesitation. That kind of customer-first attitude is always a huge plus, and it set the tone for the whole meal.

We ordered two chicken tacos and two steak tacos to start. Now, we’re usually chicken taco loyalists, but chicken can be hit-or-miss depending on how it’s cooked. Thankfully, Tacuba nailed it — the chicken was surprisingly juicy, not dry or stringy like some places serve up. The steak was solid, chopped finer than I typically prefer, but the flavor was there, especially once I piled on the salsa and fresh lime wedges they loaded into the tray. This wasn’t just a side item — it was a full meal in itself. Seriously, if you’re looking for value, this thing is stacked. The portion was generous enough to feed two people, and the flavor was spot-on. The extra-cooked veggies added a bit of char and depth that really brought it together. It’s the kind of dish that makes you pause and think, Yeah, I’m coming back here for this.
